"Picena" cool rice with fresh summer truffle

Ingredients for 4 persons:

  • g. 100 fresh summer truffle
  • g. 350 rice (suitable for salads)
  • 4 tablespoons extra virgin olive oil
  • 2 slices of ham cut into strips
  • 150 g. of fresh pecorino cheese diced
  • 2 anchovy fillets
  • 1 lemon squeezed
  • 1 tablespoon chopped parsley
  • Salt and pepper


Boil the rice in salted water, drain and leave to cool. In a bowl mix the rice with ham and cheese, add the crushed anchovy fillets, sliced summer truffle and parsley, season with olive oil, lemon juice, salt and pepper. Mix well, leave at least 10 minutes, pour into a serving dish and serve.
