Grilled cheese and white truffle cream

Ingredients for four persons:

  • 400 gr. or 14 oz. sliced cheese of choice but must be suitable for grilling like: 'Pecorino', ‘Taleggio’, ‘Scamorza’ or ‘Edam’
  • 1 or 2 spoonfuls of bechamel sauce
  • 25 g. (just under 1 oz.) of white truffle cream

Preparation:

Place cheese slices under the grill, and quickly grill on both sides. At the same time, gently melt a knob of butter in a pan and add 25 gr. (just under 1 oz.) truffle cream which you will have previously diluted in a little stock. Fold 1 or 2 spoonfuls of bechamel sauce in the butter and stir until you have obtained a smooth, even cream. Spread this on the grilled cheese slices, and serve immediately.
